The second method is pressure canning. It is used when you want to preserve low acidic foods, like most vegetables. The pressure canning temperatures have to reach 240F degrees. This temperature maintained for a specific amount of time is necessary for killing bacteria.
Another way of preserving food is drying. It is considered to be the oldest method of processing and preserving food. You can use it for fruits, vegetables and even meats. People have come back to drying food because it is very easy to do, it is a great way to make healthy snacks and it needs much less space in your food storage than any other preserved food.
And one more popular food preserving technique is freezing. Freezing is great for preserving some fresh fruits and vegetables. You should blanche your vegetables really quickly, and then put them in cold water, which will stop enzyme action, then place the food in plastic bags or containers and freeze them. Fruits are better to be frozen after dipping them in syrup or juice. Keep the temperature in your freezer stable and don’t overload it. Your food needs some cold air to circulate for keeping it properly frozen. Freezing is also great for storing leftovers and pretty much all cooked food. It will save your money and sometimes time when you need to fix something for dinner really quick.
These canning and preserving food techniques have been tested throughout many years.
